Sunday : Roasted Chicken with Lemon Olives, Rosemary & Thyme
*Make sure to prepare extra chicken to use on Tuesday for the Pasta.
Monday : Poached Salmon & Vegetables
Use leftover chicken from Sunday night for this - recipe calls for grilled chicken, but roasted will work perfectly.
Wednesday : Italian Vegetable & Braised Beef Stew
I make this without the beef, too, on nights when I don't have all day to braise the meat.
